Dylan Amyes - Sous Chef
His first taste of kitchen life began with a stint in a restaurant in Ireland, which was owned by the manager of the rugby team he was contracted to there. On returning home, the local freezing works gave him good butchery skills, which is one of his passions. He came to the Nor'Wester as a trainee chef in February 2003. While working with us, Dylan has completed his cookery qualifications with CPIT and with HSI. His skill, leadership and passion for food has seen him excel through our kitchen.
